Pandan Sticky Rice (Xoi La Dua)

Ingredients:
- 2 Bowls of glutinous rice
- Pandan leaves
- 1 Tablespoon of sugar
- 1 Teaspoon of salt
- 200gr Grated coconuts (cononut meat)
- Chopped roast peanut
- Roasted white sesame.
Process
Step 1: Wash the pandan leaves. Slice the pandan leaves to small pieces. Add the pandan leaves into a blender. Puree the pandan leaves with cold water. Next, filter the pureed pandan leaves. Remove the residue of leaves. Just keep the pandan juice.
Step 2: Mix the pandan juice with 2 liters of cold water. Soak the glutinous rice to this mixture. Add 1 teaspoon of salt into the mixture. Wait for one night.
Step 3: Next day, bring the glutinous out and wait until the glutinous become dry. Steam the glutinous rice. Sometime, use the chopsticks to turn the glutinous rice up. This is important step to create Pandan Sticky Rice which comes from many stunning Vietnamese Dessert Recipes. Next, add a little sugar, if you like.
Step 4: When the glutinous rice cooked, ladle the glutinous rice and put to the bowl. Next, organize the grated coconuts, chopped roast peanut and roasted white sesame on the top.
