This is a country style recipe originally made from Vietnamese anabas which is still a favourite fish to be used in many Vietnamese Fish Recipes, even though there are plenty of other fishes available in the market.

Ingredients: (for 2 people)

600g of anabas fish
Side dishes: apricot, perilla, Cockscomb mint, fines herbs, cucumber …
Fish sauce, ginger, garlic, chillies
Rice Pancake – Bánh đa

Process:

Step 1: Grill the anabas (if you use a roaster, it would take about 30 minutes), slice the fish. You should choose Vietnamese anabas because its meat is fresh, rich and delicious rather than tilapia. Be careful when grilling the fish, the fish should be just cooked, the skin is not burned off after grilling.

Step 2: You can make the fish sauce based on you and your taste. Add minced ginger and garlic in the fish sauce. The success of this dish is occupied by the fish sauce 90% so remember to check it constantly until you feel satisfy with its flavour.

Step 3: When you serve the dish, you can roll the fish meat with vegetables, especially apricot leaves (the signature of one of our Vietnamese Fish Recipes) because its bitter goes perfectly with the fish. If you like something a little bit interesting then cucumber and premature banana.

In previous years, in the countryside, anabas is usually grilled while covered in straw.     Xin Trang Mạng Ẩm Thực VN cho tôi biết từ Lá Mơ mà quí vị địch là Apricot Leaves có đúng không? Dân Bắc kỳ gọi là lá mơ nhưng Nam kỳ gọi là lá thúi địt. Tiếng Anh quí vị viết nghe mùi lá mơ quá!!!!
