1 cassava fruit (medium size)
200ml coconut milk can
50g white sugar
2 tablespoons tapioca starch
Dried coconut meat, grinded
White sesame, salt, sugar
Food colors (any color you love).
Step 1: Peel off the cover of cassava; clean well. Soak in water added a little salt in 8 – 10 hours.
Step 2: Use shaving tool to shave cassava well. Then, use your hands to press out all water from cassava fruit to get 200g cassava meat.
Step 3: Mix coconut milk with cassava meat in step 2, extra more 80ml thick coconut milk, sugar, tapioca starch and mix well.
Step 4: Separate mixture in step 3 into 2 equal parts (or depend on your choice). Next, add any food color into 1 part. We usually use green color (made from pandan extra water) to create cakes have shapes like worms.
Step 5: Spread oil around edges of pattern. Add green mixture cassava and use hand to press firmly on top. Bring to steam about 30 – 45 minutes. Wait to reduce heat and slice into long pieces or square shapes. Repeat this process for the white mixture cassava.
Step 7: Cook 120ml coconut juice + 1 teaspoon sugar + ½ teaspoon salt + 1 teaspoon tapioca starch with small heat until it boils and become thicker. Turn off the heat. Next, roast sesame and grind well, mix it with salt + sugar or depend on your flavor.
